Chicken Curry Noodles

Ingredients:

 

2tsp Olive Oil.
100ml Coconut Milk.
1Tbsp Garlic.
Noodles or Rice (Quantity to suit serving).
1 Handful Spring Onions.
500G Chicken Breast or Thigh.
1Tbsp Gochujang.
100ml Chicken stock or 1 cube.
2 Capsicums.
1tsp Curry Powder.
Bok Choy.

Instructions:

 

1. Add oil to a warm pan.
2. Add in veggies and garlic.
3. Cook until softened.
4. Add curry powder, gochujang & chicken.
5. After a few minutes, add in the stock & coconut milk.
6. Prepare noodles or rice.

Optional:

Once ready serve & garnish with spring onions and fried shallots.
