Ingredients:
300g short pasta
2 scallions, roughly chopped
130g baby kale
1/2 cup cottage cheese
1/3 cup grated parmesan
salt & pepper
2Tbsp extra virgin olive oil
Directions:
Step 1.
Begin boiling pasta to package directions, save 1/2 cup of cooking water to add later.
Step 2.
While pasta cooks, in a food processor, pulse scallions and 3 cups of kale to a fine chop. Add cottage cheese, parmesan, and 1/2 teaspoon each salt and pepper; pulse to combine.
Step 3.
Scrape down sides, then with machine running gradually add oil and puree until smooth.
Step 4.
Toss pasta with the sauce to coat, then toss with remaining 3 cups of kale, adding a couple tablespoons of the used pasta water to help kale wilt.
Optional:
Garnish with salt, pepper, and parmesan
