Ingredients:
300g linguini
1 cup frozen peas
2Tbsp olive oil
300g boneless skinless chicken breasts, cut into 1 inch chunks
2tsp finely grated lemon zest
1/4 cup lemon juice
100g low fat cream cheese
1/2 cup grated parmesan
1/4 parsley, roughly chopped
1/4 tsp salt
1/4 tsp pepper
Directions:
Step 1
Cook linguini per package directions, adding peas during the last 2 minutes of cooking. Reserve 1 cup of cooking water, then drain pasta and peas.
Step 2
Heat olive oil in large deep skillet on medium-high heat. Season chicken with salt and pepper then cook until golden brown on all sides, 4-5 mins
Step 3
Add lemon juice to skillet and cook, scraping up any browned bits. Add cream cheese and stir until melted; remove from heat.
Step 4
Fold in lemon zest and parmesan, then parsley. Toss with pasta (adding reserved cooking liquid, 1 tablespoon at a time as necessary). Serve immediately.
Optional:
Garnish with parsley and grated parmesan.
